Watermelon Feta Salad with Mint

Ingredients
  

  • 6 cups chilled seedless watermelon, cut into 1-inch cubes
  • 4 ounces feta cheese, cubed or crumbled into large pieces
  • 1/4 cup fresh mint leaves, thinly sliced
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest, optional
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon black pepper
  • 1 cup diced cucumber, optional
  • 1/4 cup thinly sliced red onion, optional
  • 2 cups arugula, optional

Method
 

  1. Step 1: Cut the Watermelon
    Cut the chilled watermelon into 1-inch cubes. If it is very juicy, drain the cubes in a colander for 5 minutes.
  2. Step 2: Make the Dressing
    Whisk together the olive oil, lime juice, lime zest, salt, and black pepper until combined.
  3. Step 3: Prepare the Add-Ins
    Cut the feta into large crumbles and thinly slice the mint. Prepare the cucumber, red onion, or arugula if using.
  4. Step 4: Toss the Salad
    Place the watermelon in a large bowl. Drizzle with part of the dressing and toss gently. Add cucumber or red onion if desired.
  5. Step 5: Finish and Serve
    Top with feta and mint. Add more dressing if needed, finish with black pepper, and serve immediately.
