Ingredients
  

Zucchini Bars
  • 2 cups shredded zucchini
  • cups all-purpose flour
  • 2 cups granulated sugar
  • 3 large eggs
  • 1 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
Cream Cheese Frosting
  • 8 ounces cream cheese
  • ½ cup unsalted butter
  • 3-4 cups powdered sugar
  • 1 teaspoon vanilla extract

Method
 

  1. Prepare the Pan
    Preheat oven to 350°F (175°C).
    Grease a 15×10-inch baking pan or line with parchment paper.
    Bring eggs, cream cheese, and butter to room temperature for better mixing.
  2. Prepare the Zucchini
    Wash, trim, and finely grate zucchini.
    Measure about 2 cups.
    Do not squeeze out the moisture — it keeps the bars soft and tender.
  3. Mix Wet Ingredients
    Combine eggs, sugar, oil, and vanilla in a large bowl.
    Mix until smooth and well combined.
  4. Mix Dry Ingredients
    Whisk together flour, baking powder, baking soda, cinnamon, and salt.
    This helps distribute the flavors evenly.
  5. Make the Batter
    Add dry ingredients to wet ingredients.
    Fold in shredded zucchini gently.
    Mix only until combined to keep the bars soft.
  6. Bake the Bars
    Spread batter evenly into the pan.
    Bake for 25–30 minutes until a toothpick comes out clean.
    Cool completely before frosting.
  7. Make the Frosting
    Beat cream cheese and butter until smooth.
    Add powdered sugar and vanilla gradually.
    Mix until creamy and spreadable.
  8. Frost and Slice
    Spread frosting over cooled zucchini bars.
    Add cinnamon or nuts if desired.
    Chill briefly, then slice into squares for cleaner cuts.
