Cut the cheese: Slice mozzarella into sticks about 3 inches long and 1/2 inch thick. Pat dry if needed.
Prepare the breading station: Set up 3 bowls: flour with garlic salt, eggs whisked with milk, and breadcrumbs mixed with seasoning.
Coat the mozzarella: Dip each stick in flour, egg, and breadcrumbs. Repeat the egg and breadcrumb coating for a crispier shell.
Freeze: Place coated sticks on a parchment-lined baking sheet and freeze for at least 45 minutes, or until firm.
Fry: Heat oil to 350°F–365°F. Fry a few sticks at a time for 1–2 minutes, until golden brown.
Serve: Drain on a wire rack, rest briefly, then serve hot with warm marinara sauce.
