  • 4 chicken breasts
  • 1 cup shredded cheese
  • 2 cups diced tomatoes
  • ½ cup onion (chopped)

  • Juice of 1 lime
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp garlic powder
  • Salt & pepper

Method
 

  1. Step 1: Preheat and Prep
    Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
    Pat the chicken dry—this small step helps prevent extra liquid later.
  2. Step 2: Mix the Salsa Fresca
    In a bowl, combine:
    Tomatoes
    Onion
    Jalapeño
    Cilantro
    Lime juice
    Season lightly with salt and pepper.
    Let it sit for a few minutes. The flavors start blending right away.
  3. Step 3: Season the Chicken
    Place chicken breasts in the baking dish.
    Drizzle with olive oil, then sprinkle your seasoning mix evenly on both sides.
    Make sure each piece is coated—it’s a small detail, but it changes everything.

    Spoon the salsa fresca over the chicken.
    Here’s a small trick:
    If your salsa looks watery, use a slotted spoon. Too much liquid can make the dish soggy.

    Bake uncovered for 25–30 minutes, depending on thickness.
    You’re aiming for an internal temperature of 165°F.
  6. Step 6: Add Cheese and Finish
    Sprinkle cheese over the top.
    Return to the oven for another 5 minutes, just until melted and bubbly.

    Let the chicken rest for about 5 minutes.
