Ingredients
  

  • ¾ cup Greek yogurt
  • 1 large egg
  • ¼ cup milk (more if needed)
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 tsp vanilla extract
  • Optional: 1–2 tbsp maple syrup or honey

  1. Step 1: Mix the Wet Ingredients
    Whisk the Greek yogurt, egg, milk, and vanilla in a bowl until smooth.
    Don’t rush this part. A smooth base makes a difference later.
  2. Step 2: Combine the Dry Ingredients
    In another bowl, mix flour, baking powder, and salt.
    This helps everything rise evenly—no random flat pancakes.
  3. Step 3: Bring It All Together
    Pour the dry ingredients into the wet mixture and gently stir.
    Here’s the key:
    Stop mixing as soon as it comes together.
    A few lumps? Totally fine. Overmixing is what makes pancakes tough.
  4. Step 4: Heat the Pan
    Set your pan to medium heat and lightly grease it.
    Too hot? You’ll burn the outside.
    Too low? You’ll get pale, sad pancakes.
    Medium is your sweet spot.
  5. Step 5: Cook the Pancakes
    Pour about ¼ cup of batter for each pancake.
    Wait until bubbles form on top (about 2–3 minutes), then flip.
    Cook another 1–2 minutes until golden.
    That golden color? That’s flavor. Don’t rush it.
