Peanut Butter Blondies

Ingredients
  

  • ½ cup unsalted butter, melted
  • 1 cup creamy peanut butter
  • 1 cup brown sugar (packed)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup chocolate chips Optional
  • ¼ cup chopped peanuts Optional
  • Peanut butter chips Optional
  • Sea salt flakes Optional

Method
 

  1. Step 1: Prepare the Baking Pan
    Preheat your oven to 350°F (175°C).
    Line an 8×8-inch baking pan with parchment paper or lightly grease it.
    This makes it easier to lift the blondies out after baking.
  2. Step 2: Mix the Wet Ingredients
    In a large mixing bowl, whisk together:
    melted butter
    peanut butter
    brown sugar
    Mix until smooth and creamy.
    Add the egg and vanilla extract and continue mixing until fully combined.
  3. Step 3: Add the Dry Ingredients
    Stir in:
    flour
    baking powder
    salt
    Mix gently until just combined. Do not overmix.
    If using chocolate chips or peanuts, fold them in at this stage.
  4. Step 4: Spread the Batter
    Transfer the batter into the prepared pan.
    Use a spatula to spread it evenly across the pan.
    Optional: sprinkle a few extra chocolate chips or peanuts on top.
  5. Step 5: Bake
    Bake for 20–25 minutes.
    The edges should be golden and the center should look set but still soft.
    Avoid overbaking to keep the blondies chewy.
  6. Step 6: Cool and Slice
    Allow the blondies to cool in the pan for about 20 minutes.
    Lift them out using the parchment paper and slice into squares or bars.
