Mediterranean Chickpea Salad

Ingredients
  

  • 2 cans chickpeas rinsed & drained
  • 1 –2 cups cherry tomatoes halved
  • 1 cucumber diced
  • ¼ cup red onion finely chopped
  • ½ cup Kalamata olives
  • ½ –1 cup feta cheese
  • Dressing:
  • 3 –5 tbsp olive oil
  • 2 –3 tbsp lemon juice
  • 1 –2 tbsp red wine vinegar
  • 1 –2 cloves garlic minced
  • 1 tsp Dijon mustard
  • Salt & pepper

Method
 

  1. Prep all vegetables and rinse chickpeas
  2. Whisk dressing ingredients together
  3. Combine everything in a large bowl
  4. Toss gently until evenly coated
  5. Let sit 10–15 minutes (optional, but recommended)
