Ingredients

  • 6 cups mixed greens
  • 2 Honeycrisp apples, sliced
  • 1½ cups butternut squash, cubed
  • 1 cup Brussels sprouts, halved
  • ½ cup dried cranberries
  • ½ cup feta cheese
  • ½ cup pecans
  • ¼ cup pomegranate arils
  • ¼ small red onion, sliced
Apple Cider Vinaigrette
  • ¼ cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon maple syrup
  • 1 tablespoon Dijon mustard
  • ½ teaspoon cinnamon
  • Salt and black pepper

Method

  1. Roast the Vegetables: Preheat oven to 425°F. Toss squash and Brussels sprouts with olive oil, salt, and pepper. Roast for 15 minutes, stir, then roast another 5–8 minutes until tender and browned. Cool slightly.
  2. Toast the Pecans: Toast pecans in a dry skillet over medium-low heat for 3–5 minutes, stirring often. Remove when fragrant and let cool.
  3. Make the Dressing: Add olive oil, apple cider vinegar, maple syrup, Dijon, cinnamon, salt, and pepper to a jar. Shake for 20 seconds, then adjust to taste.
  4. Prepare the Apples: Wash, dry, core, and thinly slice the Honeycrisp apples. For make-ahead prep, toss lightly with lemon juice and pat dry.
  5. Assemble: Combine greens, apples, cranberries, onion, pomegranate, cooled vegetables, and half the dressing. Toss gently, add more dressing if needed, then top with feta and toasted pecans.
