Ingredients
  

  • 2 cups broccoli florets (raw or blanched)
  • 1-2 Honeycrisp apples, diced
  • 1/4 cup red onion, thinly sliced (optional)
  • 1/4 cup dried cranberries
  • 1/4 cup sunflower seeds or chopped nuts (optional)
  • 1/2 cup Greek yogurt
  • 1 tbsp honey
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Method
 

  1. Step 1 – Prep Your Ingredients
    Start by chopping the broccoli into bite-sized florets. If you prefer a softer texture, you can blanch the broccoli for 1-2 minutes. However, if you love crunch, leave it raw! Then, dice the Honeycrisp apples and toss them with a little lemon juice to keep them from browning.
  2. Step 2 – Make the Dressing
    In a separate bowl, whisk together 1/2 cup Greek yogurt, 1 tablespoon honey, 1 tablespoon lemon juice, and salt and pepper to taste. This simple dressing is light, creamy, and the perfect way to tie all the ingredients together.
  3. Step 3 – Toss the Salad Together
    In a large mixing bowl, combine the broccoli, apples, red onion (if using), dried cranberries, and sunflower seeds or nuts. Pour the dressing over the salad and gently toss everything until it's well-coated.
  4. Step 4 – Serve and Enjoy
    Serve the salad immediately for the best flavor or store it in the fridge for later. The flavors will continue to develop after a few hours, so it’s great for meal prep too!
