Heat the grill: Preheat an outdoor grill or grill pan to medium or medium-high heat. Use medium heat for softer peaches and medium-high heat for firmer peaches or deeper grill marks.
Cut the peaches: Wash and dry the peaches. Slice each peach in half along the seam, twist gently, and remove the pit. Leave the skin on to help the peaches hold their shape.
Brush lightly: Brush the cut sides with a thin layer of olive oil or melted butter. Avoid adding honey before grilling because it can burn quickly.
Grill cut-side down: Place peaches cut-side down on the hot grill. Cook for 3–5 minutes without moving them, until grill marks appear and the fruit softens slightly.
Flip if needed: If the peaches are firm, flip and cook for another 2–4 minutes. If they’re very ripe, skip flipping to keep them from turning mushy.
Add toppings: Transfer to a plate and serve warm with ice cream, Greek yogurt, honey, burrata, basil, or your favorite toppings.
