  • 3 large eggs (separated)
  • ½ cup blueberries
  • 2-3 tbsp sweetener (optional)
  • ½ tsp vanilla extract (optional)

  1. Step 1 – Preheat & Set Up
    To begin, preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper. This step is important because it prevents sticking and controls spreading.
  2. Step 2 – Separate the Eggs
    Next, carefully separate the egg whites and yolks into two bowls. Even a small amount of yolk can affect how well the whites whip, so take your time.
  3. Step 3 – Blend the Base
    After that, mix the cottage cheese, egg yolks, and sweetener until smooth. If your cottage cheese is chunky, blending it briefly will improve the texture significantly.
  4. Step 4 – Whip the Egg Whites
    Meanwhile, beat the egg whites until stiff peaks form. This usually takes about 3–5 minutes. At this stage, the peaks should hold their shape firmly.
  5. Step 5 – Fold Gently
    Then, gently fold the whipped egg whites into the cottage cheese mixture. Instead of mixing aggressively, use slow, careful motions to keep the air intact.
  6. Step 6 – Add Blueberries
    Once combined, fold in the blueberries. For better results, lightly coat them with a bit of starch so they do not sink.
  7. Step 7 – Shape & Bake
    After that, scoop the batter into small rounds (about 3–4 inches wide). Bake for 25–30 minutes until lightly golden and set in the center.
  8. Step 8 – Cool Before Serving
    Finally, let them cool for 10–15 minutes. This helps them firm up and hold their shape properly.
