Activate the YeastMix warm water, sugar, and yeast in a large bowl. Let sit for 5 minutes, until foamy. Make the DoughAdd melted butter, salt, and 3 cups flour. Mix, then gradually add more flour until the dough is soft and slightly tacky. KneadKnead for about 5 minutes by hand or with a dough hook, until smooth, soft, and elastic. Rest the DoughCover and let the dough rest for 10–30 minutes. Meanwhile, preheat the oven and prepare the baking soda bath. Shape the BitesPreheat the oven to 400°F. Divide dough into 6 pieces, roll each into a 20-inch rope, and cut into 1½–2-inch pieces. Boil in Baking Soda BathBring 9 cups water and baking soda to a boil. Boil 8–10 bites at a time for 10–15 seconds, then remove with a slotted spoon and drain. Salt & BakePlace bites on prepared baking sheets and sprinkle with coarse salt. Bake for about 15 minutes, until deep golden. Brush with melted butter if desired and serve warm.
