Crockpot Chicken Gnocchi Soup (Olive Garden Copycat)

Ingredients
  

  • 3 chicken breasts
  • 2 cups carrots sliced
  • 1 cup onion diced
  • 2 celery stalks chopped
  • 3 cloves garlic
  • 1 tsp Italian seasoning
  • 4 cups chicken broth
  • 16 oz potato gnocchi
  • 1 cup heavy cream or half-and-half
  • 2 cups fresh spinach
  • Salt & pepper

Method
 

  1. Load the crockpot Add chicken, chopped carrots, onion, celery, garlic, Italian seasoning, and broth. A common starting point: 3 chicken breasts 2 cups sliced carrots 1 cup onion 2 stalks celery 3 cloves garlic 4 cups broth Slow cook: Cook on low for 6 hours or high for 4 hours, until the chicken falls apart easily.
  2. Shred the chicken You can shred it right in the pot using two forks. Stir it into the broth so it absorbs all that flavor.
  3. Add the gnocchi and cream During the last 20–30 minutes, stir in the gnocchi and whichever dairy option you prefer.
  4. Finish with spinach Toss it in right before serving so it wilts gently and keeps its bright color.
