Creamy Broccoli Salad

Ingredients
  

For the salad:
  • 6 to 8 cups fresh broccoli florets, cut small
  • ½ cup cooked crispy bacon, chopped
  • ½ cup dried cranberries
  • cup red onion, finely diced
  • ¼ to ½ cup sunflower seeds or slivered almonds
  • ½ to 1 cup shredded cheddar cheese, optional
For the dressing:
  • ¾ to 1 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon lemon juice, optional
  • 1 to 2 tablespoons sugar, honey, or maple syrup
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder, optional
  • ½ teaspoon onion powder, optional

Method
 

  1. Prep the broccoli: Wash the broccoli under cool water, dry it very well, then cut it into small bite-size florets. Slice any thick pieces lengthwise so the dressing coats them better.
  2. Cook the bacon: Cook the bacon until crisp, then drain on paper towels. Let it cool before chopping so it doesn’t warm the dressing.
  3. Make the dressing: In a small bowl, whisk together the mayonnaise, vinegar, lemon juice, sweetener, salt, pepper, garlic powder, and onion powder. Taste and adjust with more vinegar, sweetener, or salt if needed.
  4. Toss the salad: Add the broccoli, bacon, cranberries, red onion, sunflower seeds or nuts, and cheese to a large bowl. Pour the dressing over the top and toss until evenly coated.
  5. Chill and serve: Cover and refrigerate for at least 1 hour, or longer for better flavor. Stir before serving and garnish with extra bacon, cranberries, or seeds if desired.
