Ingredients

Donut holes
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 3/4 cup pumpkin puree
  • 1/3 cup brown sugar
  • 1 egg
  • 1/3 cup milk or buttermilk
  • 1/4 cup neutral oil
  • 1 teaspoon vanilla
Coating
  • 4 tablespoons melted butter
  • 1/2 cup granulated sugar
  • 1 1/2–2 teaspoons cinnamon

Method

  1. Prep the pan: Preheat oven to 350°F and lightly grease a 24-cup mini muffin pan.
  2. Mix dry ingredients: Whisk together flour, baking powder, pumpkin pie spice, cinnamon, and salt.
  3. Mix wet ingredients: Whisk pumpkin puree and brown sugar until smooth. Add egg, milk, oil, and vanilla; whisk until combined.
  4. Make the batter: Add dry ingredients to the wet mixture and gently fold until just combined. Do not overmix.
  5. Fill the pan: Spoon about 1 tablespoon batter into each mini muffin cup, filling about two-thirds full.
  6. Bake: Bake for 10–12 minutes, or until the tops spring back and a toothpick comes out clean or with a few moist crumbs.
  7. Cool briefly: Let cool in the pan for 3–5 minutes, then transfer to a wire rack. Mix cinnamon and sugar in a shallow bowl.
  8. Coat: Brush warm donut holes lightly with melted butter, then roll in cinnamon sugar until evenly coated. Serve warm.
