Ingredients

  • ½ cup (113 g) unsalted butter, melted and cooled
  • ⅔ cup (135 g) packed light brown sugar
  • ¼ cup (50 g) granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • ⅓ cup (80 g) pumpkin puree, blotted to about ¼ cup (60 g)
  • 1½ cups (188 g) all-purpose flour
  • 1½ teaspoons pumpkin pie spice
  • ½ teaspoon baking soda
  • ¼ teaspoon baking powder
  • ½ teaspoon salt
  • ⅔ cup (120 g) semi-sweet chocolate chips

Method

  1. Blot the Pumpkin: Spread pumpkin puree over paper towels, press gently, and repeat about 2–3 times until thickened to roughly ¼ cup.
  2. Melt the Butter: Melt butter and let it cool for 10–15 minutes. It should be warm, not hot.
  3. Mix Wet Ingredients: Whisk cooled butter, both sugars, egg yolk, and vanilla. Stir in the blotted pumpkin until smooth.
  4. Add Dry Ingredients: Fold in flour, pumpkin pie spice, baking soda, baking powder, and salt just until combined. Don't overmix.
  5. Add Chocolate: Gently fold in the chocolate chips, reserving a few for topping.
  6. Chill: Cover and refrigerate the dough for at least 30 minutes to firm the butter and improve the cookie texture.
  7. Scoop & Shape: Heat oven to 350°F. Scoop about 2 tablespoons of dough per cookie, roll into balls, and gently flatten. Add reserved chocolate chips.
  8. Bake: Bake for 10–12 minutes, until edges are set but centers still look soft. Let cookies continue setting on the hot pan.
  9. Cool & Finish: Cool on the baking sheet for 5 minutes, then transfer to a rack. Sprinkle with flaky sea salt if desired.
