Cheesy Taco Rice Skillet

Ingredients
  

  • 1 lb lean ground beef (85–90% lean)
  • 1 lean ground beef (85–90% lean)
  • 2 cloves garlic, minced
  • 1 cup uncooked long-grain white rice
  • 1 + 1/2 cups beef broth
  • 1 cup chunky salsa (mild, medium, or hot)
  • 1 tbsp taco seasoning
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1 tbsp olive oil
  • Salt and pepper to taste

Method
 

  1. Heat olive oil in a large skillet over medium heat. Add ground beef and onion. Cook 5–7 minutes until browned. Drain excess fat if needed.
  2. Stir in garlic and taco seasoning. Cook 30 seconds until fragrant.
  3. Add uncooked rice, beef broth, and salsa. Stir well to combine.
  4. Bring to a gentle boil, then reduce heat to low. Cover and simmer 18–20 minutes until rice is tender and liquid is absorbed.
  5. Sprinkle shredded cheese evenly over the top. Cover and cook 2–3 minutes until melted (or broil briefly if skillet is oven-safe).
  6. Garnish with desired toppings and serve warm.
