Ingredients
  

  • 2 slices sourdough bread
  • 1 ripe avocado
  • 2 eggs
  • 1 teaspoon lemon juice
  • Salt

Method
 

  1. Step 1: Toast the Bread
    Toast the bread until golden brown and crisp.
    You want enough crunch to support the avocado and egg without becoming difficult to bite through. After all, a good toast makes all the difference.
  2. Step 2: Prepare the Avocado
    Cut the avocado in half and remove the pit. Then, scoop the flesh into a small bowl.
    Add lemon juice, a pinch of salt, and black pepper. Next, mash with a fork until mostly smooth but still slightly chunky.
    That little bit of texture makes the finished toast more interesting. Plus, it gives each bite a fresher, more homemade feel.
  3. Step 3: Cook the Eggs
    Heat a nonstick skillet over medium heat. Then, add a small amount of oil or butter.
    Crack the eggs into the pan. After that, cook until the whites are set and the yolks reach your preferred consistency.
    For sunny-side-up eggs, cook them for 2–3 minutes and keep the yolks runny.
    If you prefer over-easy eggs, flip them carefully and cook for about 30 seconds more.
    For scrambled eggs, whisk them before cooking and stir gently over low heat.
  4. Step 4: Assemble
    Spread the avocado mixture evenly over the toasted bread. After that, place one egg on each slice.
    Season with additional salt and pepper. Finally, add your desired toppings.
  5. Step 5: Serve Immediately
    Serve while the toast remains crisp and the egg is warm. That way, you get the best texture in every bite.
