Ingredients

  • 6 cups mixed greens
  • 2 medium crisp apples
  • ½ cup walnuts
  • ⅓ cup dried cranberries
  • ⅓ cup crumbled feta
  • ¼ small red onion
  • 1 teaspoon lemon juice
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon maple syrup
  • 1 tablespoon Dijon mustard
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 1 garlic clove, optional

Method

  1. Toast the Walnuts
Toast walnuts in a dry skillet over medium heat for 3–5 minutes, stirring often. Transfer to a plate immediately once fragrant and lightly golden.
  2. Make the Dressing
Add olive oil, apple cider vinegar, maple syrup, Dijon, salt, pepper, and garlic to a jar. Shake for 15–20 seconds, then taste and adjust as needed.
  3. Slice the Apples
Core and thinly slice the apples. Toss with 1 teaspoon lemon juice if preparing ahead to help prevent browning.
  4. Assemble the Salad
Add greens, apples, onion, cranberries, half the walnuts, and half the feta to a large bowl. Toss gently with half the dressing, adding more as needed.
  5. Finish & Serve
Top with the remaining walnuts, cranberries, feta, and apple slices. Serve immediately with extra dressing on the side.
